Step 1: Marinate 5 min - Chicken + Salt + Chili + Ginger paste. Rest 5 minutes.

Step 2: Make Batter - Flour + Cold water + Baking soda. Must be ice cold.

Step 3: Double Coat - Dip chicken → Flour → Again dip → Flour. This makes it crispy.
